expect some serious 'cue when steve hanson hits the big time at his BBQ baby wildwood, opening friday.

big lou elrose has dabbled in a few things in his day; he was a grocer, referee and even a cop before settling into the life of a pitmaster. he has pulled pork with the best of them (adam perry lang of daisy may's, robby richter at hill country), but now it's time for big lou to call the shots at wildwood. purists can find solace in four varieties of ribs, pork brisket, pulled pig and signature smokes of chicken and kielbasa. the adventurous can entertain themselves with dishes like BBQ bolognese and vegetarian chili with smoked tofu. big lou's serious flavor is matched by wildwood's serious style. designed by david rockwell, a 50-foot-long bar is the focus of the 222-seat room set under an expansive reclaimed, wood timber ceiling. and tan leather booths are placed against rougher elements, like steel-frame garage doors and blackened steel details.

running wild is a big job. here, expect no less than the best.
