dearest rosa mexicano,
we write to express our gratitude for your august 15 opening.
querida, you don't know how we've been suffering for lack of made-to-order tableside guacamole. we, the molcajete generation, also give thanks for the tortilla-making station. we bless you for the more than 60 hand-selected agave tequilas, put to good use straight up or in the signature frozen pomegranate margarita. and we hang milagros on shrines for dishes such as zarape de pato, roasted and pulled duck hidden like dark jewels between waves of soft corn tortillas and a sea-foam of yellow pepper-habanero chili cream sauce.
and while we might not light candles for the david rockwell-designed interior - the 15-foot water wall, featuring cliff diver figurines that represent the famous acapulco daredevils, is nothing we haven't seen before, given that it's an element in all rosa mexicano restaurants - we will forgive the choice of location in the mall of the santa maria brickell. massive this construction might be, but no more so than any honest cathedral.
signed,
your ever-loving congregation.
