who's afraid of a little grease? certainly not tom aiken, chef and owner of tom's place, chelsea's newest spot for some good ol' fish and chips.

pass the malt vinegar. the humble and hearty staple gets a dose of eco-gourmet at aiken's latest venture. on the eco side, only sustainable fish is served (meaning cod and haddock are out, pollack and ling are in.) the furniture is made from recycled materials and cutlery is wooden. the gourmet part? it's all fried up by a chef with a michelin star on his apron. if size zeroes are shaking in their seven jeans, listen to this: the chips are chunky and cooked just as they should be. in beef drippings, with plenty of ruby ketchup on the side.

eco-conscious and eating well? now that's what we call a catch.
