bacon ice cream has nothing on the foie gras version of the sweet treat at london newcomer hibiscus, opening wednesday.
we love our foie with toast points and grilled pears. ice cream, we're not so sure. but if the michelin-starred resto's rep precedes it, we'll take our chances. hibiscus is moving from its original location in gastronomic-rich ludlow to london and bringing the entire staff, in hopes of making a seamless transition. we hope so too. head chef claude bosi and wife claire will continue to whip up snails in garlic and lime foam, carpaccio of cornish cod and irish sea urchin. bosi's inventive daily menu shows his time in the top paris kitchens (under alain ducasse) and his obvious love of the job. throw in a 700-bin wine list and subversive-sounding sweets like iced olive oil parfait in a newly-designed spot, and it'll be one to watch. be prepared to come in with an iron stomach for hibiscus' inventive combos.
we just hope carmelized pig's head terrine is your thing.
