the folks from nick & toni's are taking their tony selves over to the corner of townline road and montauk highway to fire up their new smoker. we've been salivating since memorial day, but townline BBQ will finally open its doors next week.

when they cooked up the idea to open an authentic BBQ joint in the hamptons, nick & toni's executive chef joe realmuto and owner mark smith ate their way along the barbeque trail from lubbock, texas, to kansas city to do some research. (kind of like when we flew to paris to "research" celine's prêt a porter.) realmuto came up with a menu focused on genuine texas-style BBQ (dry-rubbed and smoked, served with sauce on the side). the suitably rustic roadside shack - the former home of alison by the beach - on the way to sagg-main beach will surely be the pit stop to make after a day in the surf. the building, with a rear open-air deck overlooking the surrounding farmland, has a worn in look, and wood walls - inside and out - are the proper background for chowing some expertly smoked dishes. brisket, chicken, texas links, beef, ribs, and pork, accompanied by two house-made sauces are the meaty offerings off the chalkboard menu, with sides like cornbread, cole slaw, spicy bread and butter pickles, and collard greens. to keep everybody sauce-free, there is a hand-washing station in the center of the space.

if you can save room, there are treats like ice box cake and fried cherry pie for dessert. maybe the place should have been called waistline.
