reads a bit easier. but you can still enlist london and new
york caterer serena
bass for help (she's worked for the likes
of above). especially now that her services are available at
the beach.
so leave it to her. or at least someone who knows their thyme from their tarragon. here's
one recipe to add to your repertoire:
the ultimate potato salad with juniper and buttermilk
(serves 10 -12)
ingredients:
2 1/2 pounds small red or white potatoes
1 tsp kosher salt, plus more for cooking
2 tbsp grey poupon country brown mustard
3 tbsp white wine vinegar
1 tbsp chopped juniper berries
1/4 cup buttermilk
1/2 tsp freshly ground black pepper
1/2 cup golden olive oil
1/2 cup minced italian parsley
1/2 cup minced scallions (using the white and green parts)
try to find really small firm potatoes that are all the same size. line a sheet
pan with paper towels and set aside.
cut potatoes into even, wedge-shaped quarters; cover with well-salted cold water
and bring to gentle simmer. don’t let them boil furiously. cook until a
knife penetrates a potato with a little resistance (they shouldn’t be mushy.)
drain and briefly rinse with cold water. spread potatoes on the paper towels
to dry.
for the dressing, stir mustard, vinegar, juniper berries, buttermilk, salt, and
pepper together in a medium bowl. slowly whisk in olive oil until creamy.
in large bowl, toss potatoes with three-quarters of dressing. cover and set aside
for up to 24 hours. fifteen minutes to 1 hour before serving, add remaining dressing
and fold in parsley and scallions.
