we're going to avoid the "waverly inn east" reference right now, even though everybody who's talked about sag harbor's newest italian eatery, tutto il giorno, seems inclined to make it. we're not being snobbish, it's just that the comparison - beyond the condé nast connection - isn't apt.
the buzz about tutto is matched only by the quality of the dishes landing on tables in the 30-seater. the first thing co-owners (retired conde CEO) steve florio, larry baum, and christine bellini did right was bring in past chef-of-the-year scott conant (l'impero, alto). done up tastefully in the standard hamptons restaurant décor - bright yellow walls, white wainscoting etc. - this cozy spot overlooking the bay provides all the comforts you'd expect in a topnotch east end eatery. but wisely - particularly for a restaurateur newbie like florio - it focuses on the food instead of the flash. check your calorie counter at the door and dig into some of the must-tries on the menu: the creamy polenta topped with truffled mushroom fricassee (to. die. for.), heirloom tomatoes - now that they're coming into season - with burrata (natch), and the fritto misto, which includes calamari, shrimp, and, hands-down, the best soft shell crab.
for desert? do not miss the nutella sandwich with expresso sprinklings.
tutto is foregoing the reservation route, so expect a wait in the area of an hour on weekend nights, but it's definitely worth checking out - even if only so you can say you've been to the waverly inn east.
