Laura Adrian and Braden Perkins (Hidden Kitchen Supper Club) have opened Verjus, a wine bar and restaurant (two addresses, one biz). Located on the Palais Royale, you can sample Perkins’ cooking when the restaurant opens December 1st, and sate your cravings in the just-opened wine bar, now serving small production wines from Juan Sanchez (owner of the Paris wine institution, La Dernière Goutte). --Toni Kervina
